These Greek-Style Zucchini Noodles with Tomatoes, Olives, and Feta are a delicious meatless dinner that’s low-carb and gluten-free.
Ingredients
4 medium zucchini
2 T olive oil
6-8 cloves garlic
1 tsp. Greek seasoning
salt and fresh-ground black pepper to taste
Tomato-Olive Mixture Ingredients:
3 T olive oil
2 T fresh-squeezed lemon juice
1 T red wine vinegar
1/2 tsp. Greek Seasoning
1/2 tsp. Greek oregano
fresh-ground black pepper to taste
1 1/2 cup cherry tomatoes
1 can (6 oz. drained) pitted black or Kalamata olives
1/2 red onion
1/2 cup crumbled Feta, plus more for serving if desired
