I don’t know about you, but I am always looking for a simple AND healthy lunch idea. I grew up eating Mexican tostadas, but have found these Greek tostadas much healthier.
Ingredients
4-8″ pita bread
1 cup hummus
1 cup lettuce, shredded
1 cup grape tomatoes, sliced
1/2 cup feta cheese, crumbled
1/2 cup kalamata olives, sliced
olive oil and kosher salt (optional)
