Green bean stir fry with nutty smoked tempeh and spicy ginger peanut sauce is a flavorful weekday entrée you can put together in 15 minutes.
Ingredients
2 teaspoons sesame or olive oil
1 medium onion
1 teaspoon minced fresh ginger
7 ounces (200g) smoked tempeh (or a different kind but NOT the NATURAL one – you would have to cook that before using it)
14 ounces (400g) green beans, thawed frozen ones (or fresh ones, washed and steamed)
¼ cup (60ml) soy sauce (or tamari for gluten free)
2 tablespoons (32g) peanut butter
peanuts for garnish
rice or noodles to serve
