Green Beans and Red Kuri Salad with Miso-Curry Dressing

Serves: 2, for a light meal
A warm salad of steamed green beans and kabocha squash, with a delicious miso and curry dressing. Feel free to double or even triple the quantities for the dressing, it really tastes amazing! Serve on its own for a light meal or add grains for a more consistent one.
Ingredients
1/2 medium red kuri squash
2 big handfuls green beans (fresh or frozen), washed and ends removed
1/4 red onion or 1 shallot, thinly sliced
2 tbsp each : pepitas, sunflower seeds, sesame seeds
For the dressing:
1/2 tbsp miso (use gluten-free if needed)
2 tbsp water
2 to 3 tbsp walnut oil (or hazelnut, argan, olive oil)
1 tsp curry powder
lemon juice
