A Smashed Chickpea Sandwich made with Green Goddess dressing, chopped veggies and lots of melted cheese.
1 can chickpeas, drained, rinsed and patted dry (about 2 cups of chickpeas)
1/3 cup Healthy Green Goddess Dressing, or more to taste
1/2 cup chopped vegetables (onions, celery, bell peppers, jalapeño peppers, kale – whatever you have on hand)
Salt and pepper, to taste
4 slices bread (use your favourite gluten free sandwich bread)
1/2 cup shredded cheese (I used a combination of cheddar and mozzarella) or more to taste
