Grilled Balsamic Tofu Sandwiches
Tangy grilled balsamic tofu, creamy herbed ricotta, and crunchy ciabatta bread come together to make a delicious dinner-worthy sandwich.
For the Tofu:
1 block extra firm tofu, drained and pressed about 30 minutes
1/3 cup balsamic vinegar
2 tablespoons maple syrup
1/4 teaspoon ground black pepper
1/2 teaspoon rosemary
1/4 teaspoon thyme
Herbed Ricotta:
1 cup ricotta cheese
1/4 cup finely chopped fresh parsley
1/2 tablespoon finely chopped fresh thyme
1/4 teaspoon ground black pepper
For Sandwich Assembly:
1 loaf ciabatta bread (find a long, narrow loaf or rolls if possible)
1 tablespoon olive oil (approximate)
Spinach leaves
Sliced tomato
