Ingredients
1/4 cup pesto, prepared or homemade
1/2 teaspoon hot smoked paprika
Extra-virgin olive oil for brushing
2 large zucchini, halved and cut lengthwise into 4 slices
8 slices whole grain bread
4 ounces Gruyere or Appenzeller cheese, shredded
