Healthy Funfetti Ice-Cream Sandwiches

This lightened up, wholegrain sugar cookie is loaded with colorful sprinkles and mini chocolate chips and held together with creamy vanilla bean frozen yogurt.

3/4 cup white whole wheat flour
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
6 tablespoons salted butter (softened)
2/3 cup granulated sugar
1 egg
1 1/2 teaspoon vanilla extract
1 tablespoon unsweetened applesauce
1/4 cup semi-sweet mini chocolate chips
1/4 cup sprinkles
2 cups of your favorite frozen yogurt.*
