Ingredients
3 tablespoons plus 1 teaspoon extra-virgin olive oil, divided
2 pounds carrots, peeled and sliced into 1/3-inch slices (about 6 cups)
1 ¼ teaspoons salt
1 tablespoon chopped garlic
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon dry harissa
¼ teaspoon ground turmeric
3 tablespoons lemon juice
½ cup chopped curly parsley
