Italian Quinoa Patties. Full of protein and packed with familiar Italian flavors, these little patties make a delicious meatless meal.
Ingredients
1/2 medium onion, chopped (about 3/4 -1 cup)
1 teaspoon minced garlic
1 Tablespoon olive oil
salt and pepper
4 cups cooked and cooled quinoa
3/4 cup finely grated romano cheese (I use Locatelli)
1 cup Italian seasoned bread crumbs
1/4 cup fresh basil, chopped
1/2 cup fresh Italian parsley, chopped
4 large eggs
1/4-1/2 cup milk
olive oil for frying
