This is a delicious and fresh salad using seasonal ingredients.
Ingredients
1 bunch dinosaur kale, stems removed and sliced thin
3 plums (depending on size), chopped coarsely
1/3 cup shelled pistachios
1 cup cooked quinoa
1 teaspoon dijon mustard
1 tablespoon maple syrup
1/4 cup olive oil
3 tablespoons apple cider vinegar
Salt and pepper, to taste
