Kitchen Sink Black-eyed Pea Soup
This vegan soup has everything but the kitchen sink! It’s great for nights when you need a quick and easy solution to dinner, or you just want to curl up with a hearty bowl of goodness. Just use what you’ve got in the pantry and recreate this amazing dish in no time.
1 cup dried black-eyed peas
1 1/2 bay leaves
3 cups water
1 can vegetable broth
1/2 tsp salt
2 tsp olive oil
1 medium onion, diced
2-3 medium carrots, diced
1 red bell pepper, diced
1 large garlic clove, diced
14 oz crushed tomatoes (organic preferred)
10 oz package frozen spinach
8-10 oz package frozen corn
3/4 tsp thyme
1/2 tsp oregano
1 tsp dried cilantro
1/2 tsp pepper
1/8 tsp cayenne pepper (optional)
