Traditional Middle Eastern layered onion bread with olive oil, known as Jordanian Matabaqa.
Ingredients
BREAD DOUGH BALLS:
3 cups (16 ounces) all-purpose flour
1 teaspoon kosher salt
½ teaspoon fennel seeds
1½ cups warm water (you may need a little more or less)
¼ cup extra virgin olive oil
FILLING:
½ cup extra-virgin olive oil, plus a little more for your work surface.
3 cups finely chopped yellow onions
1 teaspoon kosher salt
½ teaspoon ground allspice
1 teaspoon ground turmeric
