Lemongrass Udon Noodles with Veggies and Tofu

These udon noodles are so delicious- light, fragrant, and full of veggies! The lemongrass adds a light and delicious flavour that the noodles soak up.
Ingredients
8 cups of water
4 stalks of lemongrass, roughly chopped
3 cloves of garlic, crushed
thumb size piece of fresh ginger, roughly chopped
1-2 red chilies, seeds removed and roughly chopped
2 heads of broccoli, cut into bite-size pieces
1 red bell pepper, sliced
1 cup of julienned carrots
1/2 of a white onion, thinly sliced
600g of medium tofu, cut into cubes
800g of udon noodles
2 tablespoons of neutral oil, like canola oil
soy sauce to taste, for serving
