Mushroom and Feta Breakfast Casserole has two of my very favorite ingredients in a low-carb and gluten-free breakfast casserole that’s meatless and also South Beach Diet Phase One!
Ingredients
12 eggs
1 T milk or half and half
1 pound or more mushrooms
2 tsp. olive oil
1 cup crumbled Feta cheese
1/3 cup sliced green onions
1 tsp. Spike Seasoning
fresh ground black pepper to taste
