1 small shallot, chopped (about 2 tablespoons)
2 Meyer lemons
10 ounces fettuccine
1 cup heavy cream
1/4 cup Parmesan cheese, grated
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. fresh thyme, minced
