Backyard mint cantaloupe ice cream with a hint of lime. Tastes like summertime!
Ingredients
Cantaloupe purée:
2 tablespoons lime juice
¼ teaspoon finely chopped mint leaves
½ small cantaloupe, seeded, peeled, and chopped (about 1-1/3 cups puréed)
1 large handful whole mint leaves
¼ cup sugar
Ice cream base:
2 cups whole milk
2 tablespoons corn starch
3 tablespoons cream cheese, room temperature
1¼ cups heavy whipping cream
2/3 cup sugar
¼ cup corn syrup
