This hearty, flavorful vegetarian stroganoff is under 250 calories a serving and takes less than 40 minutes to make.
Ingredients
6 oz egg noodles
1 tbs butter
1 tbs olive oil
1 onion, chopped
1 lb portobella mushrooms, cut into 1-1/2″ dice
2 tbs flour
1 c vegetable broth
1/2 c fat free sour cream
1/2 c fat free Greek yogurt
4.5 oz (1 container) Trader Joe’s Goat’s Milk Creamy Cheese (or substitute regular chevre)
1/4 cup chopped fresh parsley
1/4 tsp cayenne pepper, or to taste
salt and freshly ground black pepper, to taste
