It takes some time to make, but when you roast the tomatoes, your house will be filled with an amazing smell of garlic, olive oil and the sweet scent of slightly burned tomatoes. Then you add the fresh herbs, and with the first time the flavours mix and combine in your month, it takes you in your happy place.
Ingredients
1,5 kg ripe tomatoes
1/4 cup + 2 tablespoons olive oil
2 tablespoons balsamic vinegar
12 garlic cloves, sliced
2 medium onions, chopped
1 l water
salt
freshly ground white pepper
a bunch of fresh basil
a small bunch of fresh parsley
a few leaves of fresh sage
