A small batch of whole grain shortbread cookies studded with crunchy crushed candy cane.
Ingredients
1/4 cup unsalted butter, softened
2 tablespoons coconut sugar (sub organic cane sugar)
1/8 teaspoon food-grade peppermint oil or 1/4 teaspoon vanilla extract
1/2 cup white whole wheat flour (sub all-purpose flour)
A pinch of fine grain sea salt
2 tablespoons of crushed peppermint candy cane, divided (about one whole candy cane)
1 tablespoon semi-sweet chocolate chips
1/16 teaspoon of coconut oil
