This salad is a great light yet rich and filling vegetarian dish-meal.
Ingredients
1½ cups basmati rice
1 tablespoon olive oil
1 garlic clove, crushed
4 tablespoons zereshk berries (dried barberries )
¼ teaspoon cumin – optional
1 bunch Swiss chard or kale
1 tablespoon lemon juice
Salt & pepper
4 tablespoons toasted pistachio (or almonds, pumpkin seeds, or sunflower seeds)
1 cup basil leaves
½ cup mint leaves or dill
1 avocado
