This Polenta porridge is a fun alternative to your usual oatmeal. Topped with a quick apricot compote & sticky pistachios.
Ingredients
Dried Apricot Compote:
1 C Dried Apricots/ approx 25 (unsulphured preferably), roughly chopped
1 Orange
2/3 C Boiling water
Polenta Porridge:
1-1/2 C Almond milk
Pinch of salt
1 Tbsp Maple Syrup
1/2 C Polenta
1/2 tsp Vanilla extract
Small handful of pistachios
1 tsp Maple syrup
Cinnamon
