Provencal Style Roasted Tomato and Tofu Bake
This dish is a fun, new way to use tofu. It’s placed over cherry tomatoes and red onions, all covered up with a light, acidic, slightly sweet sauce, and then roasted until golden and crispy, and the vegetables are tender. Enjoy!
One block firm tofu
2 cups cherry tomatoes, halved
½ of a red onion, thinly sliced
¼ cup apple cider vinegar
¼ cup olive oil
2 garlic cloves, minced
1 one inch piece ginger, minced
1 tablespoon lemon zest
1 tablespoon honey or agave
1 teaspoon sumac (a fruity spice blend common in North African food- it goes great on vegetables!)
½ teaspoon to one teaspoon of paprika, depending on your desired level of spice
Salt and pepper, to taste
