Enjoy the smell of fall in your house as you bake these pumpkin mini-muffins. These are vegan, no sugar added, and absolutely delicious!
Ingredients
1 flax egg (1 tbsp flax & 3 tbsp water)
1/2 cup pumpkin
1/2 cup almond milk
1 tbsp lemon juice
1 banana
1 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp pumpkin pie spice
1 tsp cinnamon
1.5 c flour of your choice (I used 3/4 c. white and 3/4 c. whole wheat)
1/3 c chocolate chips
