Pumpkin Spice Mascarpone Mousse with Ginger Molasses Cookies

The beaten egg whites and whip cream allow the mousse to be lite, the mascarpone/pumpkin puree, smooth rich in flavor pull it all together.
Ingredients
3 eggs, whites and yolks separated
½ cup sugar, divided
8 ounce container of mascarpone cheese, at room temperature
1 cup canned pumpkin (about 7 ounces)
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon cardamom
1 pint whipping cream
4 ginger molasses cookies, crumbled
cocoa powder for dusting
