Quinoa, Black Bean, and Mango Salad is a delicious light summer entree or side!
Ingredients
1½ quinoa
2¼ cups water
5 tablespoons lime juice
½ jalapeno chile, seeded and diced
¾ teaspoon cumin
1 teaspoon salt
½ cup olive oil
⅓ cup fresh cilantro leaves
1 orange, red, or yellow bell pepper, seeded and diced
1 mango, peeled and cut into 1″ pieces
1 15-oz can of black beans, rinsed
