Quinoa Cabbage Rolls

Roasted vegetables, quinoa and pumpkin seeds – rolled up in savoy cabbage leaves. Delicious and nutritious.
Ingredients
1 medium size savoy cabbage (about 1 ½ lbs)
3 cups cooked quinoa (see how-to-cook in notes)
1 onion, cut into large pieces
3 or 4 medium size cloves of garlic
5 or 6 small cremini or button mushrooms
1 sweet pepper, cut into large pieces
2 cups cauliflower or broccoli (or a mix of both)
1 tablespoon olive oil
Pepper & salt to taste
¼ cup unsalted pumpkin seeds
3 teaspoons herbes de provence
Pinch nutmeg
1 tablespoon lemon juice
2 cups tomato sauce
