Smoky vegan quinoa chili with peppers, squash and kidney beans.
Ingredients
2 dried chipotle chiles
2 tablespoons extra-virgin olive oil
1 onion, chopped
1 red, yellow or orange bell pepper, seeded and chopped
2 tablespoons minced garlic
3 tablespoons tomato paste
1 tablespoon chili powder
3 cups chopped squash or zucchini (or other veg – see above)
2 cans diced tomatoes with juice
4 cups vegetable stock
1 cup quinoa, rinsed
2 cans kidney beans, drained and rinsed
2 scallions, chopped
1 avocado, diced
