Quinoa Stuffing with Squash, Pistachios and Sage

Ingredients
1 cup quinoa
2 cups vegetable broth
4 TBSP unsalted butter
1 onion, chopped
4 ribs celery, diced
1 yellow squash, peeled and diced
1/2 cup pistachios, shelled
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp pepper
2 TBSP fresh chopped sage
