8 cups packed kale leaves, chopped into bite sized pieces
1 cup carrots, shredded
1 red apple, cut into bite sized pieces
3 tablespoons extra-virgin olive oil
4 tablespoons maple syrup
2 tablespoons Dijon mustard
1/2 tsp. salt
1/2 tsp. black pepper
