Red, White and Blue Vegan Chocolate Mousse Parfait

Creamy, rich vegan chocolate mousse in a red, white, and blue parfait topped with whipped coconut cream. Gluten-free, oil-free.
Ingredients
Chocolate Mousse:
1 package (270 grams) silken tofu, well drained
4-1/4 oz dark chocolate, broken into pieces (I use 85% cacao dark from Trader Joe’s)
1/4 c unsweetened cocoa powder
1/4 c water
1 tbs almond milk
1/2 c sugar
1/4 c Chambord, or liquor of your choice
Whipped Cream:
1 can full-fat coconut milk or coconut cream
2-3 tbs sugar or sweetener of choice, to taste
1 tsp vanilla
1/4 tsp agar, optional (see instructions)
1 c blueberries
1 c strawberries, diced
