This quick, light side dish is based on cauliflower rice and makes a healthy, low carb meal. It’s easier to cook than a classic risotto, keeping you full for hours. All you need is cauliflower and basic ingredients like tinned tomatoes, leek, carrots, and olive oil.

1 Large Onion (peeled and diced)
