Roasted Beet Hummus

Creamy, fuchsia colored, roasted red beet hummus. Full of antioxidants and super easy to make!

Ingredients

1 small red beet, scrubbed
1 can of garbanzo beans
2 tablespoons of tahini
Juice of 1/2 a lemon
2 cloves of garlic, minced
1/4 cup olive oil
salt and pepper to taste
