Cute carrots, roasted whole, served with a crunchy and melty topping made with nuts and seeds, dried fruits and olive. A simple but impressive recipe!
Ingredients
1 bunch small carrots with greens still attached, washed and dried
1 tbsp olive oil
1 tsp ground coriander
1 tsp lemon zest
to serve : fleur de sel, lemon wedges, olive and dried fruits dukkah
Olive and dried fruits dukkah:
1 small handful hazelnuts
1 tbsp sunflower seeds
1 tbsp sesame seeds
1 tsp cumin seeds
1 tsp fennel seeds
a few dried fruits of your choice (e.g. 2 apricots, 1 fig, 1 date, a few raisins and cranberries)
crumbled goat cheese (optional)
