A vegan and gluten free brown rice bowl with roasted tofu, broccoli, sprouts and a chili basil lime dressing.
Ingredients
1 block (14 ounces) extra-firm tofu
3 tablespoons grapeseed or other neutral-flavored oil
3 tablespoons fresh squeezed lime juice
2 tsp. lime zest
1/2 tsp. garlic powder
1/2 tsp. red pepper flakes
1/8 tsp. salt
1/8 tsp. black pepper
2 cups broccoli florets
1/4 cup fresh basil, roughly chopped
2 cups cooked brown rice
1/2 cup fresh sprouts or pea shoots
1/4 cup toasted sunflower seeds
