Roasted Eggplant and Quinoa Salad
This delightful quinoa salad is packed full of nutrients and protein and offers a bright lemony finish. Take on a picnic, to a potluck or enjoy for lunch or a snack. It’s hearty, satisfying and healthy!
For the Salad:
1½ C Red Quinoa (or white)
3 C Water
2 Eggplant
6 tsp Extra Virgin Olive Oil
¾ C Kalamata Olives, pitted and rough chopped
⅓ C Marinated Sun Dried Tomatoes, drained and rough chopped
2 Tbs Fresh Thyme, chopped (about 10 sprigs)
¾ tsp Sea Salt
Fresh Ground Pepper to taste
For the Dressing:
1 Tbs Balsamic Vinegar
1 Tbs Fresh Lemon Juice
3 Tbs Extra Virgin Olive Oil
1 Large Clove of Garlic, minced
½ tsp Lemon Zest
Pinch of Salt
