Roasted squash vegan quinoa risotto
Roasted squash creamy quinoa risotto, vegan & naturally gluten free, a perfect healthy addition to your holiday table, only 130 calories per serving.
3 medium/small delicata squash halved and seeded
2 tsp oil
2 cups finely chopped onions
3 garlic coves minced
3 – 5 fresh sage leaves or 1/2 tsp dry sage
8 oz crimni mushrooms sliced
2 cups quinoa
1 1/2 cups steel cut oats
1/2 cup dry whie wine such as pinot grigio
10 cups Imagine brand no-chicken broth
cooking oil spray
For cheese sauce:
3 tbsp quick soaked raw cashews
3 tbsp vegan parmesan
1 tbsp miso paste
1 tbsp dry inactive nutritional yeast
1/4 tsp garlic powder
1/2 cup broth + 2 tbsp
1/4 tsp turmeric powder
