These vegan crostini with smashed avocado, roasted sweet potatoes, broccoli and za’atar seasoning are a great appetizer for any game day or party.
Ingredients
2 small sweet potatoes, peeled and cubed
5 tablespoons extra-virgin olive oil, divided
1 tsp. salt, divided
1/2 tsp. black pepper
1 head broccoli, cut into florets
2 tablespoons fresh squeezed lemon juice, divided
1 (12-ounce) French baguette, sliced
2 ripe avocados, halved and seeded
About 1 tsp. za’atar seasoning
