10 Corn Tortillas (I use Mission Ultra-Thin Corn Tortillas)
8oz Baby Bella Mushrooms
1 Sweet Potato
2 Medium Zucchini
½ Cup Frozen Corn
1 Tablespoon Cumin
2 Teaspoon Mexican Oregano
2 Teaspoons Salt
1 Tablespoon Pepper
1 Tablespoon Chili Powder
1 ½ Cups Reduced Fat Shredded Mexican Cheese
2 Cups Roasted Tomatillo Salsa
