Eating for one doesn’t have to mean a fried egg on toast. These Root Vegetable Calzones are quick and easy for nights when you’re dining solo
Ingredients
1.5 cups roasted root veggies, diced into small cubes (I used a combo of carrot, turnip, sweet potato, red onion, and parsnips)
6 cloves garlic, unpeeled
3 sprigs of thyme, leaves removed
1 Tbsp rosemary, chopped
1 package of pizza dough (or your favourite homemade recipe)
6 heaping Tbsp ricotta cheese
1.5 cups shredded mozzarella
olive oil
