Savory Waffles with Roasted Broccoli and Cauliflower
A recipe for sour cream waffles with cheddar cheese and herbs, topped with roasted broccoli and cauliflower. Great for brunch or weeknight dinners!
For the Vegetables:
3 cups broccoli florets
3 cups cauliflower florets
2 tablespoons extra-virgin olive oil
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. red pepper flakes
1 tablespoon fresh squeezed lemon juice
For the Waffles:
1 cup all-purpose flour
1/4 cup whole wheat flour
2 tsp. baking powder
1/4 tsp. salt
2 eggs
1/2 cup sour cream
1/2 cup plus 1 tablespoon whole milk
6 tablespoons melted butter, cooled to room temperature
1/4 cup shredded cheddar cheese
2 scallions, white and light green parts thinly sliced
2 tablespoons fresh parsley, chopped
