Ingredients
Semolina Pudding:
2½ cups (600ml) milk
3 tablespoons (45g) sugar
1 tablespoon (15g) butter
1 teaspoon finely grated orange zest
Pinch of salt
Pinch of ground vanilla (or seeds from ½ a pod)
⅔ cup (100g) semolina
⅓ cup (100g) full fat Greek yogurt
Macerated Summer Berries:
1.3 pounds (600g) mixed berries
1 orange, juiced
1 teaspoon finely grated orange zest
2½ tablespoons (50g) honey
⅓ cup (80g) sugar
2 sprigs of thyme
