A delicious, hearty, and fiber rich cold lentil salad made with black lentils, herbs, walnuts, and tossed with a citrus vinaigrette.
Ingredients
2 cups dry black lentils then cooked (yields about 4 cups cooked)
½ red onion, thinly sliced
2 cups fresh spinach (or arugula is nice)
½ cup chopped toasted walnuts
For the dressing:
⅓ extra virgin olive oil
2 cloves garlic, minced
½ teaspoon sea salt
2 teaspoons Dijon mustard (or another strong mustard)
¼ teaspoon freshly ground black pepper
Pinch of ground sumac
