Simple Tabbouleh recipe with mint, curly parsley and bulgur.
Ingredients
1 ½ cup boiling water
1 cup bulgur wheat
1/3 cup extra-virgin olive oil
3 tablespoons lemon juice
1 teaspoon salt
3 medium tomatoes, diced (about 3 cups)
3 cups chopped curly parsley
3 tablespoons to ¼ cup finely chopped fresh mint, to taste
½ cup minced red onion
