Simplified Pad Thai Salad
This simplified pad Thai salad will curb cravings for comfort food while keeping things light and healthy!
1 zucchini, spiralized or peeled into “noodles”
2 carrots, spiralized or peeled into “noodles”
2 cups green cabbage, shredded
1 small head of broccoli, cut into bite-sized pieces (stalk and all!)
½ pineapple, cut into bite-sized chunks
1 cup alfalfa sprouts
½ cup button mushrooms, sliced and marinated in 1 tbsp tamari, 1 tbsp water, and 1 tsp lemon juice for at least 20 minutes
2 cloves garlic, roughly chopped
For the Dressing:
1 zucchini, peeled and cut into small chunks
½ cup water
2 dates
4 tbsp sesame seeds
2 tbsp Bragg’s liquid aminos, tamari, or soy sauce
1 tbsp miso paste
1 tbsp Thai spice mix *OR* if you can’t find it
Juice of 1 lemon
