Simple, savory, and super healthy Lentil Miso Soup- made in the slow cooker so it’s crazy easy.
Ingredients
1 cup dried green lentils
2 tablespoons white miso paste (or a product called “Minute Miso” works really well)
2 cups unsalted vegetable broth
3 garlic cloves, minced
3 cups finely chopped green chard or bok choy
1 small yellow onion, finely diced
1 tablespoon rice vinegar
2 tablespoons soy sauce
½ cup finely chopped green onions
1 teaspoon minced ginger
1 (14 ounce) package firm tofu, drained, cut into ½ inch cubes
lemon slices
ground sea salt, as desired
