This soba noodle salad is healthy, spicy, very refreshing, packed with crunchy veggies and an insanely creamy peanut-ginger dressing.
Ingredients
150 gr soba noodles
3-4 spring onions
1 cup of chopped carrots
1 bell pepper or 6 mini peppers
1 chili
handful of roasted peanuts
2 tbsp peanut butter
2 tbsp peanut oil
1 tbsp maple syrup
1 clove of garlic
3 tbsp tamari or soy sauce
1 lime, juice + zest
small piece of ginger
water
