Soul-Warming Potato & Pea Soup
This soup is so easy, and delicious too. Awesome for quick lunches, or lazy dinners. And what’s even better is that it’s full of flavor — I topped it with Bubbies sauerkraut one time, and couldn’t stop freaking out at how amazing it was! I like to make it during the morning nap, and blend it/reheat it just before serving. Add some toasted sourdough bread, grass-fed cheese, and some extra sauerkraut to the table, and you’ve got a stress-free dinner that also feeds your soul. In the summer, try blending in a few basil leaves for extra flavor.
1 tablespoon oil of choice (I like grass-fed ghee or coconut oil for this)
1 onion, diced small
3 cups frozen peas
3 medium potatoes, medium dice
1/2 teaspoon salt
Boiling water to cover
Optional: 1/4 cup heavy cream or coconut milk
Optional: Sauerkraut (I highly recommend it, though!)
