A simple vegetarian dish inspired by my favorite tapas!
Ingredients
4 tablespoons extra virgin olive oil
1 bunch chard, stemmed and coarsely chopped
1 bunch kale, stemmed and coarsely chopped
3 garlic cloves, thinly sliced
1/2 cup whole wheat panko breadcrumbs
1/2 teaspoon cumin
Pinch of red pepper flakes
1 1/2 tablespoons red wine vinegar
1/2 lb dried chickpeas, cooked, or 2 15-ounce cans, drained
1/2 cup tomato puree
1/2 teaspoon paprika, preferably smoked
