Spanish Churros Con Chocolate

Everybody has to try Spanish Churros Con Chocolate at least once in their lifetime. Deep fried dough served with a chocolate sauce.

1/2 cup + 2 tablespoons water
a pinch of salt
1/2 teaspoon sugar
1/4 cup (60g) unsalted butter , cut into pieces
1/2 cup +1 tablespoon (75g) all-purpose flour , sifted
2 eggs
2 cups or more oil , for frying
2 tablespoons sugar
1 tablespoon cinnamon

The chocolate sauce:

1/2 tablespoon cornstarch
1 cup milk
3.5 oz. (100g) dark chocolate
2 tablespoons sugar
